What is moelleux or chocolate fondant
A moelleux or chocolate fondant is a kind of small underbaked chocolate cake with a meltingly soft center. It is served warm and the inner part of the cake has to be all gooey and intense. They’re supposed to be served warm -a perfect recipe for people like me who aren’t patient enough to wait for baked goods to cool down.
Technically, there’s a slight difference between a moelleux and a fondant au chocolat. A moelleux is soft, but not runny like pure melted chocolate. A fondant (‘melting’ in french) does have pure melted chocolate in the center, which runs a little when you get to it.
Note on the recipe:
- Powdered skim or nonfat milk is the key ingredient to give the fondant’s texture. Add an extra one-two teaspoons for extra sweetness/richness.
- Use exact amounts of the ingredients and don’t let them bake to long. (it will lose its texture and flavour)

- 125 g yoghurt
- 80 g unsweetened apple sauce
- 5 g (1 teaspoon) powdered skim milk
- 15 g peanut butter
